Meal of the Week: Grilled Pork Chops

  This recipe came from an Every Day with Rachael Ray magazine, and it's a new weekly staple at our house.
The first few times I made it with her recommended mango couscous and grilled zucchini, but we also like it with asparagus and baked potatoes.  Our favorite is the marinade for the pork, which is shared below.  You could also get creative and use it on chicken, steak, kabobs, etc.



What you need:
Four 3/4" thick center-cut boneless pork chops
1 Tbs olive oil
1 Tbs fresh lemon juice
2 teaspoons chili powder
1/2 tsp salt and pepper (each)

What you do with it:
Combine olive oil, lemon juice, chili powder, and salt & pepper in a small bowl.  Brush on the pork and let stand while you prepare the other sides.
Grill pork chops until they are cooked through (about 10 minutes).

Enjoy a brilliant new way to zest up the 'other white meat'!
