{Something to Accompany the} Meal of the Week: Yummy Salad

I started this post in April and never finished it.  Ooops. This is a great spring-time salad, but of course it's good anytime pears are in season!
My mom used worked in a church kitchen for years, and this was one of her favorite salad recipes that she picked up while working there.  It's sweet, tangy, and always receives plenty of compliments when I've taken it anywhere to share.


Ingredients:

Romaine Lettuce
½ c. sugar
1/3 c. cider vinegar
2 Tbs. Lemon juice
2 Tbs. onion finely chopped
½ tsp salt
2/3 c. vegetable oil
2-3 tsp. poppy seeds
1 c. shredded swiss cheese
1 medium apple, cored and cubed
1 medium pear, cored and cubed
¼ c. dried cranberries
½ to 1 c. chopped cashews 
Directions:
In blender or food processor, combine sugar, vinegar, lemon juice, onion and salt.
Cover and process until blended.  Gradually add oil and poppy seeds while blending.  In a salad bowl, combine the romaine, cheese, apple, pear, and cranberries.  Drizzle with desired amount of dressing.  Add cashews.  Yields 8-10 servings.
